CHEESY GREEN BEAN CASSEROLE
This side dish is great!  Green bean casserole is more dressy than plain green beans at the table and looks like you went to so much trouble, and let's face it, it tastes that much more interesting, too.  Most times plain green beans will do, but occasionally I like to dress them up!  We all need a good green bean casserole in our low-carb arsenal of recipes.

4 cups cooked green beans (1 L)
1/cup onion, diced (60 mL)
Sauce:
4 oz cream cheese, softened (125 g)
2 tbsp whipping cream (30 mL)
2 tbsp mayonnaise (30 mL)
1 cup grated Monterey Jack cheese (250 mL)
1/cup pork rind crumbs (60 mL)
1 tbsp butter, melted (15 mL)

Preheat oven to 350°F (180°C).

In 2-qt (2 L) casserole dish, place cooked green beans and onion.

Sauce:  In food processor or blender, process cream cheese, whipping cream and mayonnaise.

Pour sauce over vegetables and toss gently to combine.  Sprinkle with Monterey Jack cheese.

Topping:  In small bowl, combine pork rind dust and melted butter.  Sprinkle over the casserole.

Bake in preheated oven 30 minutes.
